The Role


Mandarin Oriental is seeking a talented and passionate Pastry Chef de Partie
to join our pre-opening culinary team. Reporting to the Executive Pastry Chef,
the Pastry Chef de Partie will be responsible for overseeing a designated
section of the pastry kitchen, ensuring the preparation and presentation
of exceptional pastries, desserts, breads, and baked goods that reflect
the legendary standards of Mandarin Oriental.
This role plays a critical part
in maintaining product consistency, mentoring junior pastry colleagues,
and driving operational excellence during the exciting pre-opening phase.
The ideal candidate will bring creativity, technical expertise, strong
leadership skills, and a commitment to delivering memorable culinary experiences
for our guests.

Key Responsibilities


Operational Excellence

  • Supervise and coordinate the day-to-day
    operations of an assigned pastry section, such as desserts, bakery,
    viennoiserie, chocolate, or afternoon tea.
  • Produce high-quality
    pastries, desserts, breads, and baked goods in accordance with established
    recipes, quality standards, and presentation guidelines.
  • Ensure mise en
    place is prepared and maintained to support efficient kitchen operations
    and service requirements.
  • Monitor production schedules and workflow
    to ensure timely preparation and delivery of all pastry items.
  • Maintain
    consistency in taste, texture, appearance, and portion control across all pastry
    offerings.

Quality & Food Safety

  • Uphold the highest
    standards of food quality, hygiene, sanitation, and food safety in compliance
    with local regulations and Mandarin Oriental standards.
  • Conduct regular
    quality checks to ensure all products meet established specifications and guest
    expectations.
  • Ensure proper storage, stock rotation, labeling,
    and handling of ingredients and finished products.
  • Minimize waste
    through effective inventory management and sustainable kitchen practices.

Leadership & Team Development

  • Lead, motivate, and mentor
    Commis Pastry Chefs and junior pastry team members, fostering a culture
    of excellence and continuous learning.
  • Provide hands-on training
    to ensure colleagues follow established recipes, techniques, and operational
    standards.
    Support the Executive Pastry Chef in promoting teamwork,
    engagement, and professional development within the pastry brigade.

Menu Development & Innovation

  • Collaborate with the Executive
    Pastry Chef and pastry leadership team in developing dessert menus, recipes,
    seasonal offerings, and presentation concepts.
  • Participate in recipe
    testing, product development, and continuous improvement initiatives to enhance
    the guest experience.
    Contribute creative ideas while maintaining alignment
    with Mandarin Oriental's culinary philosophy and brand standards.

Pre-Opening Responsibilities

  • Support all pre-opening pastry
    kitchen activities, including kitchen setup, equipment commissioning
    and testing, recipe trials, and operational readiness preparations.

  • Assist in establishing standard operating procedures, production workflows,
    and quality assurance processes for the pastry operation.
  • Contribute
    to creating a positive and high-performing team culture from the outset.

Collaboration & Guest Experience

  • Work closely
    with culinary and service teams to ensure seamless execution of dining
    experiences, banquets, special events, and guest requests.
  • Support
    the delivery of exceptional guest experiences by ensuring pastry offerings
    consistently exceed expectations.
  • Maintain effective communication
    with colleagues across departments to achieve departmental and hotel
    objectives.

Qualifications &
Experience

  • Diploma, certification, or formal training
    in Pastry Arts, Culinary Arts, or a related discipline preferred.

  • Proven experience as a Pastry Chef de Partie or a strong Demi Pastry Chef
    within a luxury hotel, luxury resort, or fine dining environment.

  • Pre-opening experience is an advantage.
  • Strong knowledge
    of classical and contemporary pastry techniques.
  • Expertise in baking,
    chocolate work, plated desserts, artisan breads, viennoiserie, and pastry
    production.
  • Sound understanding of food safety, hygiene practices,
    and quality control procedures.
  • Proficiency in inventory management,
    stock control, and production planning.
  • Strong organizational skills
    with exceptional attention to detail.
  • Ability to perform effectively
    in a fast-paced, high-volume environment.
