The Role

The
Pastry Demi Chef de Partie plays an important role in the daily operations
of the pastry kitchen, assisting in the preparation and presentation
of exceptional pastries, desserts, breads, and baked goods that meet
the renowned standards of Mandarin Oriental.
This position offers
an excellent opportunity for an aspiring pastry professional to further develop
their technical expertise, contribute to a world-class culinary operation,

will demonstrate a passion for pastry arts, a commitment to quality, and

Key Responsibilities

Operational Excellence


  • Assist in supervising and coordinating a designated section of the pastry
    kitchen, ensuring smooth daily operations and service readiness.

  • Prepare and present pastries, desserts, breads, and baked goods
    in accordance with established recipes, quality standards, and presentation
    guidelines.
  • Maintain proper mise en place to support efficient
    production and service operations.
  • Ensure consistency in product
    quality, taste, texture, appearance, and portion control.
  • Support
    the pastry team in achieving production schedules and service requirements while
    maintaining operational efficiency.

Quality & Food Safety


  • Uphold the highest standards of food quality, hygiene, sanitation, and food
    safety in compliance with local regulations and Mandarin Oriental
    standards.
  • Follow proper procedures for storage, labeling, stock
    rotation, and handling of ingredients and finished products.
  • Assist
    in maintaining clean and organized workstations, equipment, and storage
    areas.
  • Support sustainability initiatives and waste reduction efforts
    through responsible use of ingredients and resources.

Team Support
& Development

  • Work closely with Pastry Chef de Partie, Commis
    Pastry Chefs, and other culinary colleagues to ensure seamless kitchen
    operations.
  • Provide guidance and support to junior team members when
    required, promoting teamwork and knowledge sharing.
  • Demonstrate
    a positive attitude and willingness to learn while contributing to
    a collaborative work environment.
  • Support departmental training
    initiatives and continuously develop culinary skills and pastry knowledge.

Inventory & Cost Control

  • Assist with inventory management,
    stock control, and ingredient requisitioning for the assigned pastry
    section.
  • Monitor stock levels and report shortages or quality concerns
    to supervisors.
  • Help minimize wastage through proper product handling,
    storage, and production planning.
  • Ensure ingredients and supplies
    are utilized efficiently and responsibly.

Pre-Opening
Responsibilities

  • Support all pre-opening pastry kitchen activities,
    including kitchen setup, equipment testing, recipe trials, and operational
    readiness preparations.
  • Assist in establishing workstation
    organization, production procedures, and quality standards.
  • Participate
    actively in training sessions, colleague onboarding, and pre-opening operational
    initiatives.
  • Contribute to building a positive and high-performing
    pastry team culture from the outset.

Collaboration & Guest
Experience

  • Collaborate with culinary and service teams to ensure
    smooth execution of daily operations, special events, banquets, and guest
    requests.
  • Support the delivery of exceptional dining experiences
    by ensuring all pastry products consistently meet guest expectations.

  • Maintain effective communication with colleagues across departments
    to achieve departmental and hotel objectives.


Qualifications & Experience

  • Diploma,
    certification, or formal culinary training in Pastry Arts, Culinary Arts, or
    a related field preferred.
  • Previous experience as a Demi Chef de
    Partie, Commis Pastry Chef, or similar role within a luxury hotel, luxury
    resort, or fine dining environment.
  • Pre-opening experience
    is advantageous but not essential.
  • Strong understanding of basic
    and advanced pastry techniques, baking methods, and dessert preparation.

  • Knowledge of breads, viennoiserie, cakes, plated desserts, and pastry
    production.
  • Familiarity with food safety, hygiene standards,
    and quality assurance procedures.
  • Basic understanding of inventory
    management and stock rotation practices.
