About the job

Based at the Mandarin
Oriental Downtown, Dubai within the Hotel Leadership Team in Dubai, the Director
of RB&E is responsible responsible for all operational and administrative
aspects of the RB&E division including budgeting, maintenance of quality
standards, training and reviews of colleagues. Director of RB&E reports to
the Hotel Manager.

As a Director of RB&E, you will
be responsible for the following duties:

  • Oversee RB&E
    employees, facilities, and financial performance to maximise profitability,
    ensure cost efficiency, and maintain high operational standards through daily
    inspections of front and back of house areas.

  • Continuously
    monitor and analyse service quality, guest satisfaction, financial results,
    marketing effectiveness, hygiene, and quality benchmarks (e.g., LQE, MOQA)
    to drive improvement.

  • Supervise food and beverage preparation,
    presentation, and service to maintain exceptional quality, while analysing sales
    mix, pricing, and cost control to optimise performance.

  • Lead
    promotional, marketing, and social media initiatives in collaboration with Sales
    and PR, while tracking competitor and market trends to enhance brand positioning
    and revenue.

  • Manage team performance through leadership,
    recruitment, training, coaching, and engagement, while conducting regular
    meetings to review operations, financials, productivity, and development
    plans.

  • Ensure compliance with safety, food regulations,
    and hotel policies, oversee financial planning (budgeting, forecasting, CAPEX),
    maintain operational systems, and drive continuous improvement across all RB&E
    operations.

As a Director of RB&E, we expect
from you:

  • Bachelor’s degree or Higher National Diploma
    in Hospitality, Hotel, or Business Management, with extensive luxury hotel
    experience.

  • Minimum 10 years in 5-star hospitality, including
    at least 6 years in Food & Beverage leadership roles, ideally as Director of F&B
    in high-volume operations.

  • International exposure across
    multiple regions (Asia, Europe, North America, preferably the Middle East),
    with pre-opening or renovation experience advantageous.

  • Strong
    operational capability to manage all RB&E functions, meet financial targets,
    control costs, and adhere to brand standards.

  • Proven leadership,
    communication, and interpersonal skills, with the ability to develop teams,
    handle guest queries effectively, and adapt to pressure and diverse
    situations.

  • High professional standards including excellent
    grooming, fluency in English, flexibility, and the ability to work both
    independently and collaboratively.
