About
the Role

Head Chef at Petit Crenn Melbourne
is responsible for overseeing the culinary operations and lead the team
in this exciting new signature restaurant, scheduled to open in October 2026
and will be centrally located in the historic InterContinental Melbourne
the Rialto.
style="margin-bottom: 0cm;">This career-enhancing role offers the opportunity
to lead the delivery of an innovative, high-quality and profitable dining
experience. As a key member of the leadership team, you will work
collaboratively with the Area General Manager – Restaurants & Bars,
Restaurant Manager and other stakeholders to ensure the successful launch
and ongoing success of the operation.
A little taste of your
day-to-day
class="ortl-align-justify">Deliver an impeccable dining experiences, through
the production of quality, consistent food preparation, taste & presentation
in line with the brand standards.
class="ortl-align-justify">Create and update menus that reflect seasonal ingredients,
current trends, and customer preferences;
class="ortl-align-justify">Be hands on in all aspects of daily kitchen operations,
including food prep, cooking in service and plating;
class="ortl-align-justify">Ensure optimum ordering of food stock & accurate
stocktakes;

with the front-of-house teams to ensure seamless service;
class="ortl-align-justify">Conduct menu tastings and train service teams to confidently
present menu offerings to guests.

the dining experience;

with guests to gather feedback and enhance their dining

costs and implement measures to control expenses;

and as well as possess relevant capabilities to meet job
requirements;

systems of quality control, wastage, portion control & food
safety; Responsible for cost effective
rostering and approving timesheets for the restaurant’s Kitchen
team;
Collaborate and prepare the restaurant’s
annual budget and assist with forecasts, future plans, and reports
for management

training, coaching and development of the team members to expand and enhance
skills; Ensure compliance with all food safety
and hygiene regulations, conduct regular inspections and audits to maintain high

What we need from you

You must hold a valid and unrestricted
work visa to work in Australia
style="margin-bottom: 0cm; margin-right: 0cm; margin-top: 0cm;">Diploma
in Commercial Cookery is essential
style="margin-bottom: 0cm; margin-right: 0cm; margin-top: 0cm;">Minimum 2-3
years in a leadership role within a commercial kitchen within luxury hotels,
high-end restaurants / specialty cafes or wine-bars;
class="ortl-align-justify">
Fine dining experience is preferrable;
class="ortl-align-justify">
Experience with systems in kitchen management, rostering
and time and attendance;

leading and motivating a high performing kitchen team

Understanding of food standards and food safety / HACCP
audits;

knowledge of industry food health & safety in Australia;

Ability to work under pressure and in a fast-paced
environment;
