About the Role
Petit Crenn is scheduled
to open in October 2026 and will be centrally located in the historic
InterContinental Melbourne the Rialto.
As Bar
Manager, you will be the face of the bar, reporting directly to
the Restaurant Manager. You will lead all bar operations, inspiring
and developing a high-performing team while delivering exceptional guest
experiences. Working alongside passionate professionals, you will champion
a brand renowned for its excellence, authenticity, and innovation, ensuring
every guest interaction reflects our commitment to outstanding service, premium
beverages, and memorable moments.
Duties
and Responsibilities
Oversee the efficient day-to-day operation of the bar, ensuring service
standards are met and exceptional guest experiences
are delivered.
Manage guest feedback
and complaints professionally, keeping the Restaurant Manager informed
of significant issues and outcomes.
Process guest
transactions accurately and in line with company policies and cash-handling
procedures.
Ensure compliance with all health, safety and licensing regulations
across bar operations, equipment and practices.
Maintain beverage
quality standards, ensuring consistency in preparation, presentation
and service.
Drive beverage knowledge, training and upselling capability across
the team.
Ensure effective use of POS and inventory systems, with accurate
transaction recording and team training.
Support beverage
promotions, special events, seasonal menus and sales
initiatives.
Maintain administrative processes relating to reservations, events, staff
records, stock ordering and operational documentation.
Track business levels,
sales performance, guest trends and operational metrics to support planning
and decision-making.
Conduct stocktakes,
manage inventory and investigate stock variances.
Promote financial
awareness and responsible use of stock, equipment, consumables
and glassware.
Recruit, train, coach
and lead team members, fostering a positive, high-performing culture aligned
with company values.
Manage rostering,
annual leave and labour resources to meet operational
requirements.
Perform other duties as outlined in the position description or directed
by Management.

You must hold a valid and unrestricted work visa to work
in Australia
At
least 2-3 years previous leadership experience as a Bar Manager in a high-end
restaurant, wine bar or luxury hotel
Excellent knowledge of Australian and European
wines, and spirits
Strong experience with classic cocktails, a natural creativity
in developing new ideas as well as a genuine interest in keeping abreast
of trends impacting the bar industry.
Qualifications in Hotel Management and/or Food & Beverage related
field preferred
Excellent interpersonal skills.
A team player, ability to work in a fast-paced
environment and prioritise workloads, as well as assist in supporting the team
with other duties as required
