Job
Purpose

As the Bar Manager at Hedwig Bar, you are the heart
and soul of our flagship cocktail destination. You are not just managing a bar –
you are leading a department.

You will be responsible for the complete operational, financial, and creative
direction of Hedwig Bar, ensuring it remains a standout destination within
Krakow's hospitality scene. This is a senior leadership role requiring
a hands-on approach, commercial acumen, and a passion for people
and hospitality.

You will lead the entire Hedwig Bar team, oversee guest
experience, manage stock and financial performance, and drive innovation in our
drink offerings. You will also play a key role in shaping the bar's identity,
building a loyal guest base, and maintaining the highest standards of service
consistent with an Autograph Collection property.

Key
Responsibilities

Operational Management


  • Oversee all daily bar operations, ensuring a smooth, efficient,
    and welcoming environment.
  • Ensure exceptional guest service at all
    times – lead by example through genuine engagement, eye contact,
    and anticipation of guest needs.
  • Create and manage weekly staff
    schedules, ensuring adequate coverage during peak hours and events.

  • Manage stock levels for all beverages, spirits, wines, ingredients, and bar
    supplies – control ordering, receiving, and storage.
  • Ensure FIFO (First
    In, First Out) rotation and maintain cleanliness and organisation in all storage
    areas.
  • Complete daily opening and closing procedures, including setting
    up supplies, cleaning equipment and areas, and securing the premises.

  • Check the cleanliness and presentation of all glassware, porcelain,
    and silver before service.

Creative Direction & Menu
Development

  • Design and develop seasonal cocktail and drinks
    menus that reflect current trends and the bar's unique identity.

  • Introduce new and innovative drinks, signature cocktails, and guest
    favourites.
  • Organise tastings, masterclasses, and special bar events
    to attract and retain guests.
  • Follow global beverage trends
    and implement fresh ideas to keep the offering relevant
    and exciting.

Team Leadership &
Development

  • Recruit, onboard, train, and motivate
    the entire bar team (bartenders, barbacks, hosts).
  • Conduct regular team
    briefings, training sessions, and performance reviews.
  • Foster a culture
    of excellence, teamwork, and continuous learning.
  • Ensure all team
    members adhere to health, safety, and hygiene standards (HACCP, Sanepid).

  • Lead by example – be approachable, supportive,
    and inspiring.

Guest Experience & Relationship
Building

  • Build strong relationships with guests – remember
    names, preferences, and special occasions.
  • Handle complaints
    and resolve issues with professionalism and diplomacy.
  • Encourage guest
    feedback and drive Google review performance.
  • Personally engage
    with guests during service, especially VIPs and repeat
    visitors.

Financial & Reporting
Responsibilities

  • Control costs – monitor beverage cost
    (BC), wastage, and portion control.
  • Analyse sales data and prepare
    reports for hotel management.
  • Manage daily financial reconciliation –
    cash settlement, POS reports (Micros), and closing accounts.
  • Optimise
    operational efficiency to improve profitability.
  • Contribute ideas
    to increase revenue through upselling, promotions,
    and events.

Collaboration &
Communication

  • Work closely with the F&B Director, Head
    Chef, and other department heads.
  • Coordinate with the events team
    for private functions and special occasions.
  • Communicate clearly
    and professionally with the wider hotel team.
