style="margin-left:0px">Le Perroquet is an all-day French
brasserie from Michelin-starred Chef Daniel Rose, offering classic French dishes
crafted with seasonality, technique and a sense of occasion in the heart
of Mayfair. It will open at The St. Regis London, Mayfair’s newest luxury
destination, located at the corner of Conduit and New Bond Street.

As
Chef de Partie, you will take ownership of your designated
section, supporting the delivery of exceptional dining experiences while
ensuring the highest standards of quality, consistency and presentation.

Working closely with senior chefs, you will play a key role in the day‑to‑day
kitchen operations, preparing and cooking dishes to specification, maintaining
organisation and efficiency, and contributing to a seamless and refined culinary
experience within a luxury hospitality environment.

Key
Responsibilities

  • Prepare, cook and present dishes according
    to recipes, quality standards and presentation guidelines
  • Manage your
    designated kitchen section, ensuring consistency and efficiency in service
    delivery
  • Regulate temperatures of ovens, grills and other kitchen
    equipment to ensure optimal cooking conditions
  • Monitor food quality,
    portioning and presentation to maintain the highest standards
  • Assist
    with the preparation of hot and cold dishes, including special meals and dietary
    requests
  • Maintain accurate food logs and ensure compliance with food
    safety standards
  • Communicate effectively with the team during busy
    service periods to ensure smooth operations
  • Inform senior chefs
    of excess stock for use in daily specials and menu planning
  • Liaise
    with Food & Beverage teams regarding menu items, special dishes
    and availability
  • Ensure all work areas are clean, organised
    and compliant with hygiene and sanitation standards
  • Report maintenance
    issues, safety concerns or equipment faults promptly
  • Follow all company
    policies, health & safety and food safety
    procedures

  • Proven experience as a Chef de Partie within a high‑quality, luxury or fine
    dining environment
  • Strong knowledge of food preparation, cooking
    techniques and kitchen operations
  • Passion for high‑quality ingredients,
    presentation and flavour
  • Excellent organisational and time‑management
    skills
  • Ability to work under pressure while maintaining consistency
    and attention to detail
  • Knowledge of food safety and hygiene standards
    (HACCP)
  • Strong communication and teamwork skills
  • A proactive
    and positive attitude with a willingness to learn and develop
