The
Role
The Outlet Manager is responsible for
the successful pre‑opening preparation, launch, and ongoing operation of
the assigned food and beverage outlet. This role ensures exceptional guest
experiences, operational excellence, financial performance, and full alignment
with Mandarin Oriental’s legendary service philosophy. The Outlet Manager leads,
trains, and inspires the outlet team while working closely with the Food &
Beverage Manager and pre‑opening taskforce to establish standards, systems,
and culture from day one.
Key
Responsibilities
Pre‑Opening
Responsibilities
- Lead all pre‑opening activities for
the assigned outlet, including but not limited to: - Outlet setup,
layout validation, and operational readiness - Development of SOPs,
service sequences, and training materials in line with Mandarin Oriental
standards - Recruitment, onboarding, and pre‑opening training of outlet
colleagues
- Participate actively in menu engineering, wine
and beverage selection, and pricing strategies in collaboration with Culinary,
Finance, and the F&B Manager - Support procurement, inventory setup,
and par level definition for all operating supplies and equipment
- Conduct mock services, soft openings, and service rehearsals to ensure
flawless opening execution
Operations & Guest
Experience
- Oversee daily operations of the outlet,
ensuring the highest levels of service quality, cleanliness, and presentation
at all times - Personally engage with guests, anticipating needs,
resolving concerns swiftly, and creating memorable experiences reflective of
the Mandarin Oriental brand - Ensure consistent adherence to brand
standards, service rituals, and Forbes/LQA quality benchmarks - Maintain
strong product knowledge of food, beverages, promotions, and outlet
concepts
Leadership & People Management
- Lead
by example, fostering a culture of excellence, trust, and genuine care
- Schedule, supervise, coach, and evaluate outlet colleagues to ensure optimal
performance and engagement - Conduct regular training, performance
conversations, and talent development discussions - Promote teamwork,
accountability, and compliance with hotel policies and code of conduct
Financial & Administrative Control
- Manage outlet revenue, costs, and profitability in line with departmental
budgets and KPIs - Monitor daily sales, labor costs, and operating
expenses; implement corrective actions as needed - Ensure accurate cash
handling, POS usage, inventory control, and stock reconciliation
- Prepare operational reports and forecasts as required by the F&B
Manager
Health, Safety & Compliance
- Ensure full compliance with food safety, hygiene, sanitation, and local
regulatory requirements - Implement and monitor health & safety standards
during pre‑opening and daily operations - Conduct regular outlet
inspections and risk assessments
Qualifications &
Experience
- Bachelor’s degree or diploma in Hospitality
Management or related field preferred - Minimum 2-–3 years of experience
in food and beverage operations within a luxury or five‑star hotel
- Prior pre‑opening experience is highly desirable
- Proven leadership
experience managing diverse service teams - Strong financial acumen
with experience in budgeting, cost control, and inventory management
- Excellent communication skills in English; additional languages are
an advantage
