The Role

The
Assistant Chief Steward plays a pivotal role in establishing and maintaining
the highest standards of cleanliness, hygiene, and organization within
the hotel’s kitchens and stewarding operations. As part of the pre-opening team,
this position will be instrumental in setting up systems, training staff,
and ensuring operational readiness for the successful launch of Mandarin
Oriental Makati.

Key Responsibilities


Pre-Opening Setup

  • Assist in developing
    stewarding policies, procedures, and SOPs.
  • Support the procurement,
    installation, and commissioning of stewarding equipment.
  • Organize
    stewarding storage areas and ensure compliance with safety and hygiene
    standards.

Operational Excellence


  • Supervise daily stewarding operations, including dishwashing, cleaning,
    and waste management.
  • Ensure all kitchens and back-of-house areas meet
    hotel and local sanitation standards.
  • Monitor inventory of cleaning
    supplies, chemicals, and stewarding equipment.

Team
Leadership

  • Assist in recruiting, training, and motivating
    stewarding staff.
  • Provide ongoing coaching to ensure efficiency
    and adherence to standards.
  • Foster a culture of teamwork,
    accountability, and continuous improvement.

Collaboration

  • Work closely with the Executive
    Chef, Food & Beverage team, and Engineering to support smooth operations.

  • Coordinate with Health & Safety to ensure compliance with HACCP and other
    regulatory requirements.

Sustainability & Cost
Control

  • Implement eco-friendly practices in waste
    management and resource usage.
  • Monitor and control costs related
    to stewarding operations.


Qualifications & Experience

  • Minimum of 3–5
    years’ experience in stewarding management within a luxury hotel or resort.

  • Strong knowledge of hygiene, sanitation, and HACCP standards.

  • Proven leadership and team management skills.
  • Experience
    in pre-opening hotel operations preferred.
  • Excellent organizational
    and communication abilities.
  • Ability to work under pressure and adapt
    to dynamic pre-opening requirements.
