The Role
The
Assistant Restaurant Manager supports the Restaurant Manager in delivering
exceptional dining experiences that exceed guest expectations in line
with Mandarin Oriental’s Legendary Quality Experiences (LQE) and MOQA standards.
This role assists in overseeing daily restaurant operations, driving team
performance, ensuring operational excellence, and contributing to revenue growth
and profitability while fostering a culture of excellence, engagement,
and continuous development.
Key
Responsibilities
Operational Excellence
• Assist
the Restaurant Manager in implementing and maintaining LQE and MOQA standards
across all service interactions.
• Proactively handle guest feedback,
concerns, and special requests, ensuring timely resolution and effective
communication in the absence of the manager.
• Monitor guest satisfaction
throughout the dining experience and take immediate corrective action where
necessary.
• Conduct and support daily briefings, sharing key information
such as menu highlights, specials, and operational updates in coordination
with the kitchen team.
• Ensure efficient restaurant layout and seating
arrangements aligned with reservations and occupancy levels.
• Oversee proper
mise en place setup and ensure adequate stock levels to support seamless
operations.
• Monitor service flow, ensuring accuracy, efficiency,
and consistency in food and beverage delivery.
• Ensure accurate and timely
preparation and presentation of guest bills.
• Uphold Mandarin Oriental
grooming and presentation standards, maintaining a professional image at all
times.
• Promote the Total Training Concept by supporting training
initiatives and encouraging continuous team development.
• Maintain effective
communication within the department and across other hotel departments.

Support in building a motivated and high-performing team, taking an active role
in colleague welfare, safety, and development.
Sales and Marketing
• Identify market trends and guest preferences in collaboration with the Food
& Beverage Manager.
• Participate in public relations activities, promotional
events, and sales initiatives to enhance visibility and profitability of
the outlet.
• Actively drive revenue by maximizing sales opportunities
and upselling menu offerings.
• Maintain strong knowledge of hotel services
and facilities to effectively promote cross-selling opportunities.
Administrative and Periodic Duties
• Prepare weekly staff rosters
in line with operational requirements and business levels.
• Act as or assign
a certified OHAP instructor.
• Report and follow up on maintenance issues
to ensure operational efficiency and service standards.
Additional
Responsibilities
• Assist in organizing private dining events and special
guest occasions.
• Manage guest correspondence and ensure timely
follow-up.
• Maintain attendance records for payroll processing.
• Perform
opening and closing duties as required.
• Conduct orientation programs
for new colleagues.
• Support the Restaurant Manager in conducting annual
performance appraisals.
• Liaise with Human Resources on training
and development needs.
• Carry out any additional responsibilities
as assigned by the Restaurant Manager.
Qualifications &
Experience
• Diploma or Degree in Hospitality Management or
a related field preferred.
• Minimum of 2–3 years’ experience in
a supervisory role within a luxury restaurant or hotel environment.
• Strong
understanding of restaurant operations, service standards, and guest experience
management.
• Excellent leadership, interpersonal, and communication
skills.
• Ability to work in a fast-paced environment while maintaining
attention to detail and service excellence.
• Strong organizational
and problem-solving abilities.
• Demonstrates professionalism, grooming,
and poise aligned with luxury hospitality standards.
• Flexible with working
hours, including evenings, weekends, and public holidays.
• Fluent
in English; additional language skills are an advantage.
