About
the job

Based at Mandarin Oriental, Bangkok within the Food
Preparation Department, the Executive Chef produces consistently high-quality
food production and presentation in all outlets and facilities of the hotel.
Ensure consistent quality of all food purchased, monitoring quality, value
and costs. The reports are directly to the Director of Restaurants, Bars
and Experiences.


Responsibilities:

  • Champion the Brand Culinary
    Identity
    Lead the culinary direction in full alignment with MOBKK’s brand
    DNA, ensuring every dish reflects the concept, storytelling and experience
    expectations of the brand.
  • Deliver Consistent, High-Quality Food
    Experiences
    Drive excellence in food production across all outlets, ensuring
    consistency in taste, creativity, presentation and overall guest
    satisfaction.
  • Own Food Quality, Sourcing & Cost Management
    Ensure
    all food purchases meet brand standards for quality and sustainability while
    actively managing supplier relationships, cost efficiency and value without
    compromising the concept.
  • Achieve Financial & Operational
    Targets
    Maintain food cost percentages within agreed benchmarks through smart
    menu engineering, portion control, waste management, and efficient kitchen
    operations.
  • Strategic Kitchen Workforce Planning
    Develop and manage
    manning schedules aligned with business volume, seasonality and forecast,
    ensuring productivity while maintaining service and quality standards.

  • Drive Culinary Excellence Across All Outlets
    Lead consistency
    in execution with a strong focus on:
    • Signature presentation and modern
      plating aligned with brand aesthetics
    • High-quality ingredients
      and refined taste profiles
    • Creative garnishing and thoughtful
      accompaniments
    • Proper use, maintenance and innovation in kitchen
      equipment
  • Lead Menu Innovation & Brand
    Storytelling
    Continuously evolve menus to reflect trends, seasonality
    and brand positioning while maintaining core signature offerings.

  • Develop Talent & Build High-Performing Teams
    Coach, train and inspire
    culinary team members to embody brand values, ensuring technical excellence
    and creativity at all levels.
  • Embed a Culture of Safety, Hygiene &
    Sustainability
    Ensure strict compliance with food safety standards while
    promoting sustainable practices aligned with the brand ethos.
  • Act as
    a Brand Ambassador
    Represent the culinary function both internally
    and externally, collaborating with marketing, events and guest engagement
    initiatives to elevate the brand presence.


As Executive
Chef
, we expect you to have:

  • Culinary
    certificate and accredited continuing education requirement.
  • Minimum
    of 5 years specializing in the area of expertise.
  • Minimum of 5 years’
    experience in similar position in recognised properties/restaurants.

  • Passionate, committed, creative, flexible and a team player with high energy
    level.
  • Ability to perform duties under pressure.
  • Computer
    literate and HACCP knowledge.
  • Fluency in English is required.
    Proficiency in Thai or other languages relevant to the market would
    be beneficial.
