The Role
In
Chinese cuisine brigade, the Chef de Partie - Chinese Wok Chef is responsible
for the complete execution, quality, and consistency of all wok‑fired dishes
across all restaurants, lounges, banquets, and points of sale within
the property. This role ensures that every dish reflects the highest standards
of wok craftsmanship, fire control, aroma, and authenticity expected
in world‑class Chinese cuisine.
The Chinese Wok Chef leads and develops
junior wok cooks, maintains uncompromising standards of freshness and speed,
and plays a key role in delivering exceptional Chinese cuisine for à la carte
service, banquets, VIP events, and special functions.
Key Responsibilities
Wok Production & Culinary
Execution
- Oversee the full production of all wok‑fired dishes
across the property, ensuring consistency in taste, aroma, texture,
and presentation - Execute a wide range of wok dishes including
stir‑fries, claypot dishes, specialty sauces, seasonal vegetables, seafood,
and premium proteins - Maintain authentic Chinese wok techniques while
adapting to modern luxury dining expectations - Control fire, heat,
and timing with precision to ensure peak quality during all service periods
- Ensure all mise en place is prepared fresh daily and replenished according
to business levels - Maintain proper storage, labelling, and rotation
(FIFO/FEFO) for optimal product integrity
Inventory & Stock
Control
- Manage daily inventory for wok station ingredients
including vegetables, seafood, premium meats, sauces, aromatics,
and condiments - Conduct regular stock counts and reconcile variances
with store records and procurement - Optimize yield and minimize waste
through precise cutting, trimming, and portioning techniques - Maintain
accurate inventory records aligned with hotel financial controls and audit
requirements
Quality & Freshness Standards
- Guarantee
the highest standards of freshness and ingredient quality across all wok
preparations - Maintain strict quality control over sauces, marinades,
stocks, and aromatics - Ensure all dishes meet luxury presentation
standards across all outlets and service styles - Uphold rigorous HACCP,
hygiene, and food safety practices at all times - Ensure wok station
cleanliness, equipment maintenance, and safe handling of high‑heat cooking
environments
Skills & Competencies
- Expert‑level
mastery of wok cooking, fire control, speed, and Chinese stir‑fry
techniques - Strong understanding of luxury Chinese cuisine standards
and modern culinary techniques - Deep knowledge of premium Chinese
ingredients, sauces, aromatics, and regional flavor profiles - Ability
to lead, train, and mentor junior wok cooks and commis chefs - Strong
organizational skills and ability to work under pressure in a refined,
fast‑paced environment - Excellent communication and teamwork skills
across Chinese kitchen sections - Commitment to maintaining hygiene,
safety, and sustainability standards
Qualifications & Experience
- Certification
or Diploma in Culinary Arts or related field - Minimum 6–10 years
of experience in high‑end hospitality or luxury hotel environments - At
least 3 years in a supervisory role within a Chinese kitchen, preferably
specializing in wok cooking - Proven expertise in Cantonese and regional
Chinese wok techniques - Experience handling premium seafood, meats,
and specialty Chinese ingredients - Strong leadership skills with
the ability to motivate and develop a diverse team - Excellent
organizational, communication, and problem‑solving abilities - Passion
for innovation, craftsmanship, and delivering exceptional guest experiences
- Flexibility and resilience to thrive in the dynamic environment of
a pre‑opening hotel
