The Role


Within the Chinese Banquet Kitchen Brigade, the Chef de Partie – 1st Chinese
Wok (Banquet) is responsible for the preparation, execution, quality,
and consistency of all wok-fired dishes for banquet operations. This role
oversees the wok station during large-scale events, ensuring that all Chinese
cuisine is prepared with precision, authenticity, and efficiency while meeting
the high standards of luxury hospitality.

The Chef de Partie – 1st
Chinese Wok (Banquet) demonstrates expert mastery of wok cooking techniques,
fire control, and timing, ensuring exceptional food quality across weddings,
conferences, social gatherings, VIP functions, and special events. Working
closely with the Banquet Sous Chef and Chinese Kitchen leadership team,
this role supports seamless banquet operations, maintains strict food safety
standards, and contributes to delivering memorable guest experiences through
outstanding Chinese culinary execution.

Key
Responsibilities

Wok Production & Culinary Execution


  • Oversee the preparation and execution of all wok-fired dishes for banquet
    events, ensuring consistency in taste, texture, aroma, and presentation.

  • Prepare a wide range of Chinese banquet specialties, including stir-fried
    seafood, premium meats, vegetables, noodles, rice dishes, and signature banquet
    offerings.
  • Demonstrate advanced wok cooking techniques and precise fire
    control to achieve authentic flavours and optimal product quality.

  • Ensure all dishes are executed according to established recipes, standards,
    and banquet event requirements.
  • Coordinate production schedules
    to support multiple banquet functions and large-volume service periods.

  • Prepare and organize mise en place according to banquet event orders
    and forecasted business levels.
  • Support VIP events, special functions,
    and themed Chinese banquet experiences when required.

Banquet
Operations Support

  • Execute banquet food production in accordance
    with event timelines and operational requirements.
  • Work closely
    with banquet culinary and service teams to ensure smooth and timely food
    delivery.
  • Adapt efficiently to last-minute changes, special requests,
    and dietary requirements while maintaining quality standards.
  • Assist
    in menu tastings, food presentations, and banquet setup preparations when
    required.
  • Ensure effective communication during service to support
    successful event execution.

Inventory & Cost Control


  • Manage daily inventory requirements for wok station ingredients, including
    seafood, meats, vegetables, sauces, and specialty Chinese products.

  • Monitor stock levels and submit requisitions to ensure uninterrupted banquet
    operations.
  • Practice strict portion control and proper product
    utilization to minimize waste and support cost objectives.
  • Maintain
    accurate labelling, storage, and rotation of products in accordance with FIFO
    and FEFO procedures.
  • Support periodic inventory counts and stock
    reconciliations.

Quality, Hygiene & Food Safety


  • Maintain the highest standards of food quality, freshness, and consistency
    throughout banquet operations.
  • Ensure all products meet Mandarin
    Oriental presentation and culinary standards.
  • Uphold HACCP, food
    safety, sanitation, and hygiene procedures at all times.
  • Maintain
    cleanliness and operational readiness of wok stations, equipment, and production
    areas.
  • Ensure safe handling of high-heat cooking equipment and promote
    a safe working environment.

Qualifications &
Experience

  • Culinary diploma or equivalent professional
    culinary qualification preferred.
  • Minimum 6–10 years of experience
    in Chinese cuisine, with significant experience in wok cooking.

  • Previous experience in hotel banquet operations or large-scale Chinese
    banquet production preferred.
  • Advanced knowledge of Chinese cooking
    techniques, ingredients, sauces, and regional flavour profiles.
  • Strong
    ability to perform under pressure in a high-volume banquet environment.

  • Demonstrated leadership skills with the ability to train and mentor junior
    kitchen colleagues.
  • Sound knowledge of HACCP, food safety,
    and sanitation standards.
  • Good communication skills and ability to work
    collaboratively within a multicultural team.
