The Role

The
Demi Chef de Partie – Chinese Kitchen supports the efficient operation of
the Chinese Kitchen by assisting in the preparation, cooking, and presentation
of authentic Chinese cuisine to the highest standards of quality
and consistency. Working closely with the Chef de Partie and senior culinary
leaders, this role is responsible for maintaining operational excellence within
the assigned section while contributing to exceptional guest dining
experiences.
This position offers the opportunity to develop specialist
Chinese culinary skills, refine traditional cooking techniques, and play a key
role in the successful pre-opening journey of Mandarin Oriental Makati,
Manila.

Key Responsibilities


  • Assist the Chef de Partie in the daily operation of the assigned Chinese
    kitchen section, ensuring smooth and efficient service.
  • Prepare
    and cook Chinese dishes in accordance with established recipes, quality
    standards, and presentation guidelines.
  • Maintain proper mise en place
    and ensure readiness for all meal periods and special events.
  • Support
    the preparation of sauces, stocks, marinades, dim sum ingredients, wok dishes,
    roasted items, or other Chinese specialties as assigned.
  • Ensure
    consistency in taste, texture, appearance, and portion control of all menu
    items.
  • Assist in monitoring inventory levels and support stock rotation
    procedures following FIFO and FEFO standards.
  • Maintain the cleanliness
    and organization of workstations, kitchen equipment, and storage areas.

  • Uphold HACCP, food safety, hygiene, and sanitation standards at all
    times.
  • Work closely with Commis Chefs, providing guidance, support,
    and on-the-job training where appropriate.
  • Assist with receiving,
    checking, and storing food deliveries according to hotel standards.

  • Support the pre-opening process through kitchen setup, equipment testing,
    operational preparations, and team training activities.
  • Collaborate
    effectively with colleagues across the culinary team to ensure seamless service
    delivery.
  • Participate in sustainability initiatives and waste reduction
    programs in accordance with hotel objectives.
  • Perform any other duties
    as assigned by the Chef de Partie, Sous Chef, or Executive Chinese Chef.

Qualifications & Experience


  • Previous experience as a Demi Chef de Partie, Commis Chef, or similar role
    within a Chinese restaurant, luxury hotel, or fine dining establishment.

  • Sound knowledge of Chinese cuisine, ingredients, cooking methods,
    and traditional culinary techniques.
  • Basic experience in wok cooking,
    sauce preparation, dim sum production, roasting, or other specialized Chinese
    kitchen operations is an advantage.
  • Ability to work efficiently under
    pressure while maintaining exceptional attention to detail and quality.

  • Strong organizational and time-management skills.
  • Team-oriented
    mindset with a willingness to learn, develop, and grow within the Chinese
    culinary discipline.
  • Knowledge of HACCP, food safety, sanitation,
    and workplace safety standards.
  • Commitment to delivering the highest
    levels of food quality and guest satisfaction.
  • Flexibility
    and adaptability in a dynamic pre-opening and luxury hospitality
    environment.
