The Role


Within the Chinese Cuisine Brigade, the Chef de Partie – 2nd Chinese Wok Chef
is responsible for supporting the execution, quality, and consistency
of wok-fired dishes across the property's restaurants, lounges, banquets,
and other food and beverage outlets. Working under the guidance of the 1st
Chinese Wok Chef and Chinese Kitchen leadership team, this role assists
in maintaining exceptional standards of Chinese culinary craftsmanship,
authenticity, and operational excellence.


The Chef de Partie – 2nd
Chinese Wok Chef plays a vital role in ensuring efficient food production,
maintaining consistency during service, and supporting the development of junior
culinary colleagues. This position contributes to the delivery of exceptional
Chinese dining experiences through precise wok cooking techniques, attention
to detail, and commitment to the highest standards of quality and guest
satisfaction.

Key Responsibilities

Wok
Production & Culinary Execution

  • Prepare and execute wok-fired
    dishes according to established recipes, quality standards, and presentation
    guidelines.
  • Assist in the production of a wide range of Chinese dishes,
    including stir-fries, seafood, premium meats, seasonal vegetables, noodle
    dishes, rice dishes, and specialty preparations.
  • Apply authentic
    Chinese wok cooking techniques while maintaining consistency and efficiency
    during service.
  • Control heat, timing, and cooking methods to ensure
    optimal flavor, texture, and presentation.
  • Prepare and maintain mise en
    place to support operational readiness and smooth service periods.

  • Ensure food preparation and cooking activities meet the standards
    established by the Chinese Kitchen leadership team.
  • Support banquet
    functions, VIP events, special promotions, and high-volume service periods
    as required.

Kitchen Operations & Team Support

  • Work
    closely with the 1st Chinese Wok Chef and Sous Chef to ensure efficient kitchen
    operations.
  • Support the coordination of workflow within the wok section
    during service periods.
  • Assist in training and guiding Commis Chefs
    and junior kitchen colleagues.
  • Communicate effectively with other
    kitchen sections to promote smooth and timely food production.
  • Ensure
    all assigned tasks are completed accurately and efficiently within established
    timelines.

Inventory & Stock Control

  • Assist
    in managing daily inventory requirements for wok station ingredients, including
    vegetables, seafood, meats, sauces, aromatics, and condiments.
  • Monitor
    stock levels and communicate replenishment needs to minimize disruptions
    to service.
  • Practice proper portion control and product utilization
    to reduce waste and support food cost objectives.
  • Maintain proper
    storage, labelling, and stock rotation procedures in accordance with FIFO
    and FEFO standards.
  • Participate in regular inventory counts and stock
    reconciliation activities when required.

Quality, Hygiene & Food
Safety Standards

  • Maintain the highest standards of freshness,
    quality, and consistency across all wok preparations.
  • Ensure strict
    adherence to recipes, cooking procedures, and luxury presentation
    standards.
  • Follow HACCP, food safety, sanitation, and hygiene
    procedures at all times.
  • Maintain cleanliness and organization of
    the wok station, equipment, and work areas.
  • Ensure safe handling
    and operation of high-temperature cooking equipment.
  • Support
    sustainability initiatives and waste management practices in accordance
    with hotel standards.

Skills & Competencies

  • Strong
    knowledge of Chinese wok cooking techniques, fire control, and stir-fry
    preparation.
  • Understanding of Cantonese and regional Chinese cuisine
    principles and cooking methods.
  • Knowledge of premium Chinese
    ingredients, sauces, seasonings, and flavor profiles.
  • Ability
    to perform effectively in a fast-paced, high-volume luxury hospitality
    environment.
  • Strong attention to detail and commitment to food quality
    and consistency.
  • Good organizational and time-management skills.

  • Ability to work collaboratively within a multicultural culinary team.

  • Capability to guide and support junior kitchen colleagues.

  • Knowledge of HACCP, food safety, hygiene, and sanitation standards.

Qualifications & Experience


  • Certificate or Diploma in Culinary Arts or a related field preferred.

  • Minimum 6–10 years of experience in a Chinese kitchen, with significant
    exposure to wok cooking operations.
  • Previous experience in a luxury
    hotel, high-end restaurant, or fine dining environment is preferred.

  • Sound knowledge of Cantonese and regional Chinese cooking techniques.

  • Experience handling seafood, meats, vegetables, sauces, and specialty
    Chinese ingredients.
  • Ability to work efficiently under pressure while
    maintaining high quality standards.
  • Strong interpersonal
    and communication skills.
  • Demonstrated ability to work effectively
    as part of a team.
  • Passion for Chinese culinary traditions,
    craftsmanship, and guest service excellence.
