The Role


Within the Chinese Cuisine Brigade, the Chef de Partie – 3rd Chinese Wok Chef
is responsible for supporting the daily operation of the wok section
by preparing and executing wok-fired dishes in accordance with established
recipes, quality standards, and operational requirements. Working under
the supervision of the 1st and 2nd Chinese Wok Chefs, this role contributes
to the delivery of authentic Chinese cuisine across the property's restaurants,
lounges, banquets, and special events.


The Chef de Partie – 3rd
Chinese Wok Chef plays an important role in maintaining consistency, efficiency,
and culinary excellence during service periods. This position requires strong
technical wok cooking skills, attention to detail, and a commitment
to delivering exceptional dining experiences in line with Mandarin Oriental's
luxury hospitality standards.

Key
Responsibilities

Wok Production & Culinary Execution


  • Prepare and cook wok-fired dishes according to established recipes, portion
    standards, and presentation guidelines.
  • Execute a variety of Chinese
    dishes including stir-fries, noodle dishes, rice dishes, vegetable preparations,
    seafood specialties, and meat-based wok dishes.
  • Support the smooth
    operation of the wok station during breakfast, lunch, dinner, banquet,
    and special event services.
  • Utilize proper wok cooking techniques, heat
    control, and timing to ensure quality and consistency.
  • Prepare
    and maintain mise en place to ensure operational readiness throughout all
    service periods.
  • Assist in ensuring all dishes are delivered promptly
    while maintaining culinary standards.
  • Support the preparation
    of sauces, stocks, marinades, and other Chinese culinary components
    as required.
  • Follow instructions from senior chefs to execute menu
    items accurately and efficiently.

Kitchen Operations & Team
Support

  • Work closely with the 1st and 2nd Chinese Wok Chefs
    to ensure seamless kitchen operations.
  • Assist with organizing the wok
    station and maintaining efficient workflow during service.
  • Support
    Commis Chefs and junior colleagues by providing guidance and assistance when
    required.
  • Collaborate with other kitchen sections to ensure timely food
    production and service delivery.
  • Participate in pre-opening activities,
    kitchen setup, and operational readiness initiatives as required.

Inventory & Cost Control

  • Assist in monitoring ingredient levels
    for the wok station, including seafood, meats, vegetables, sauces,
    and condiments.
  • Notify supervisors of stock shortages and replenishment
    requirements.
  • Follow portion-control guidelines to support food cost
    management objectives.
  • Ensure proper storage, labelling, and stock
    rotation practices using FIFO and FEFO procedures.
  • Minimize food waste
    through proper handling, preparation, and utilization of ingredients.

Quality, Hygiene & Food Safety Standards

  • Maintain the highest
    standards of food quality, freshness, and consistency.
  • Ensure all food
    products meet Mandarin Oriental presentation and culinary standards.

  • Comply fully with HACCP, food safety, sanitation, and hygiene
    requirements.
  • Maintain cleanliness and organization of the wok station,
    kitchen equipment, and surrounding work areas.
  • Operate wok equipment
    and other kitchen tools safely and responsibly.
  • Support sustainability
    and waste-management initiatives within the culinary operation.

Skills & Competencies

  • Good knowledge of Chinese wok cooking
    techniques and stir-fry preparation.
  • Understanding of authentic Chinese
    ingredients, sauces, seasonings, and cooking methods.
  • Ability
    to maintain quality and consistency during high-volume service periods.

  • Strong organizational and time-management skills.
  • Ability to work
    efficiently under pressure in a fast-paced kitchen environment.

Qualifications & Experience

  • Certificate
    or Diploma in Culinary Arts or a related field preferred.
  • Minimum 6–10
    years of experience in a Chinese kitchen, with exposure to wok cooking
    operations.
  • Previous experience in a luxury hotel, upscale restaurant,
    or high-volume dining environment is an advantage.
  • Basic
    to intermediate knowledge of Cantonese and regional Chinese cooking
    techniques.
  • Experience handling Chinese ingredients, sauces, seafood,
    meats, and vegetable preparations.
  • Ability to perform effectively under
    pressure while maintaining quality standards.
  • Strong interpersonal
    and communication skills.
  • Commitment to teamwork, continuous learning,
    and professional development.
