About the job

Based at Mandarin Oriental,
Hangzhou, within the Culinary Department, the Executive Pastry Chef
is responsible for the overall management and profitable operation of the pastry
and bakery section, ensuring the highest standards of product quality, guest
satisfaction, food safety, and operational efficiency. The role oversees all
pastry and bakery operations, including desserts, afternoon tea, restaurants,
retail outlets, and banquet production, ensuring compliance with Mandarin
Oriental Hotel Group standards and business objectives. Working closely with
the Executive Chef, the Executive Pastry Chef drives creativity and innovation
through the development of market-relevant, guest-focused offerings, seasonal
menus, and new products while maintaining effective cost control and exceptional
service standards.

As Executive Pastry Chef you will
be responsible for the following duties:

  • Manage all pastry
    and bakery operations across restaurants, banquets, events, breakfast, afternoon
    tea, and retail outlets.
  • Ensure consistent product quality,
    presentation, and adherence to hotel standards.
  • Lead, train, coach,
    and motivate the pastry and bakery team.
  • Plan manpower, schedules,
    and staffing levels according to business demands.
  • Monitor team
    performance, engagement, and development.
  • Support recruitment,
    promotions, transfers, and other team management activities.
  • Maintain
    the highest standards of food hygiene, safety, and cleanliness.

  • Coordinate production requirements for banquets, events, and all food
    outlets.
  • Control food costs, inventory levels, requisitions, and waste
    management.
  • Manage labor costs and optimize productivity across all
    sections.
  • Develop and maintain strong supplier partnerships to source
    high-quality products at competitive costs.
  • Develop and introduce
    innovative pastry, bakery, and dessert offerings.
  • Enhance buffet
    displays, retail products, and visual merchandising standards.

  • Collaborate with the Executive Chef on menu planning, promotions,
    and special events.
  • Participate in operational meetings and ensure
    timely implementation of agreed action plans.
  • Respond proactively
    to guest feedback and drive continuous improvement.
  • Ensure compliance
    with company policies, food safety, and fire safety regulations.

  • Promote sustainability and efficient use of resources and equipment.

  • Maintain professional grooming standards and lead by example.

  • Remain actively involved in daily operations through a hands-on management
    approach.

As Executive Pastry Chef, we expect from
you:

  • Minimum 5 years of experience as an Executive Pastry
    Chef within an internationally recognized luxury hotel environment.

  • Strong expertise in French fine pâtisserie, viennoiserie, artisan bakery,
    luxury desserts, and premium afternoon tea concepts.
  • Experience
    in high-volume operations, including banquets and large-scale events,
    is preferred.
  • Bachelor's degree or professional qualification
    in Culinary Arts, Pastry, Bakery, or a related field.
  • Thorough
    knowledge of food hygiene, sanitation, and food safety standards.

  • Advanced skills in cakes and pastries, chocolate work, sugar artistry,
    wedding cakes, specialty cakes, and contemporary bakery products.

  • Demonstrated creativity and passion for product innovation, presentation,
    and market trends.
  • Strong leadership, coaching, communication, and team
    development capabilities.
  • Excellent organizational, planning,
    and operational management skills.
  • Proven ability to establish, lead,
    and develop pastry operations for a luxury hotel opening or pre-opening
    environment is highly desirable.
