About
the job

Based at the Mandarin Oriental, Tokyo, within the Kitchens
Department, the Executive Pastry Chef is responsible for the below
duties.

The Executive Pastry Chef reports to Executive
Chef.

As Executive Chef, you will be responsible for
the following duties:

. Operational Management


  • Oversee all pastry and bakery production across the hotel, including:

    • Gourmet Shop
    • Banquets and Events
    • Afternoon Tea

    • Breakfast Operations
  • All Restaurant Outlets pastry,
    bakery, and dessert concepts
  • Ensure consistent quality, taste,
    and presentation of all products
  • Monitor portion control and adherence
    to standardized recipes
  • Maintain high standards of cleanliness,
    hygiene, and food safety
  • Daily and weekly meetings
  • Monthly
    operational meetings
  • Ensuring action points are actually
    implemented

2. Leadership & Team Development


  • Lead, train, and supervise all pastry and bakery team members

  • Foster a positive and professional working environment
  • Conduct
    performance evaluations and provide continuous feedback
  • Manage staff
    scheduling and workforce planning
  • Ensure compliance with disciplinary
    and grievance procedures

3. Financial Responsibility


  • Manage and control:
    • Food cost
    • Daily requisitions

    • Inventory control responsibility
    • Stock management discipline

    • Labor budget ownership
    • Manpower distribution across sections

    • Adjustments based on business levels Kitchen supplies and equipment

    • Energy consumption
  • Optimize profitability through
    efficient operations and cost-conscious decision-making
  • Support
    strategic purchasing initiatives in collaboration with the Executive Chef

  • Find ways to improve operational efficiency

Product Development & Innovation

  • Develop and introduce new
    pastry, bakery, and dessert concepts
  • Stay updated on industry trends
    and innovations in pastry arts
  • Enhance product presentation
    and merchandising across all outlets
  • Drive creativity for seasonal
    offerings and promotions
  • Buffet and retail display enhancement

  • Showpieces and visual merchandising responsibility
  • Constantly
    upgrading presentation

5. Planning & Coordination


  • Collaborate with the Executive Chef and outlet managers on:
    • Menu
      planning
    • Promotions and marketing initiatives
    • Event
      execution
  • Ensure timely implementation of new menus
    and concepts
  • Monitor follow-up on operational action points
    from meetings

6. Guest Experience & Quality
Assurance

  • Ensure products meet Mandarin Oriental’s luxury
    standards
  • Respond to guest feedback and implement improvements where
    necessary
  • Maintain a strong focus on guest satisfaction and brand
    excellence

7. Compliance & Safety

  • Ensure
    compliance with all:
    • Health and food safety regulations
    • Fire
      and safety standards
    • Company policies and procedures

  • Promote sustainability and energy-saving initiatives within
    the department
  • Ensure adherence to grooming and professional
    standards
As Executive Chef, we expect
from you
:
  • Internal candidates
    are welcome
  • Minimum 3–5 years’ experience as Executive Pastry
    Chef required
  • Asia experience required, with Japan
    preferred
  • Strong expertise in French fine patisserie
    and Viennoiserie is essential
  • Banqueting experience
    preferred
