About the job

Based at
the Mandarin Oriental, Kuala Lumpur / within the Food & Beverage Department
in Kuala Lumpur, the Assistant Chief Steward is responsible to establish
and maintain system and methods of operation necessary for the Stewarding
Department to supply all outlets with clean, hygienic and timely mise-en-place
whilst minimising cost through breakage control, loss or excessive chemical
consumption and appropriate staffing level.

The Assistant Chief Steward reports to the Executive Chef/Chief
Steward.

As Assistant Chief Steward, you will be responsible
for the following duties:

• Responsible for budgeting,
  purchasing, storage and control of all F&B operating equipment and
  for recommending purchase of any operating and cleaning equipment




• Control of all permanent Stewarding colleagues to maintain correct
  employment procedures and payments of staff

• Control the casual
  Stewarding labour through liaison with Personal, Security and accounts
  department

• Communicate information via team briefing
  regularly

• Ensure disciplinary and grievance procedures
  are properly adhered to and followed

• Maintain good communication
  with the Kitchen operations, F&B section heads and other relative
  department

• Ensure that all FLHSSE standards are followed in all
  front and back areas of the Restaurant/Bar and hygiene and cleanliness in
  the storage areas

• Conduct training for colleague as well
  as implement regular training programmes

• Uphold the standards
  of Food and Beverage service and FLHSS&E as outlined in the SOP, LQE and MO
  Pillars

As Assistant Chief Steward, we expect
from you:

• A University/ Hotel School or College
  Graduate in Hotel Management

• Minimum 5 years of hotel
  experience

• Previous experience in supervising and/or
  delegation

• Willingness to develop team members and self
