About
the job

Based at the Mandarin Oriental Downtown, Dubai within
the Finance Department in Dubai, the Cost Controller is responsible
for maintaining effective cost control across the Hotel and for ensuring
the accuracy and integrity of inventories, purchasing prices, receiving, stores,
product costing and related system interfaces. Cost Controller reports to
the Chief Accountant.

As a Cost Controller, you will
be responsible for the following duties:

  • Monitor and analyze
    food, beverage, and inventory-related costs against budgets and forecasts,
    investigate variances, prepare cost reports, and recommend actions to improve
    profitability and operational efficiency.

  • Manage inventory
    accuracy by overseeing stock records, physical counts, reconciliations, par
    levels, inventory turnover, and initiatives to reduce wastage, excess stock,
    and obsolescence.

  • Maintain the integrity of Check SCM, POS,
    and master data by ensuring accurate item setup, pricing, recipes, system
    interfaces, reconciliations, and reliable consumption and cost
    reporting.

  • Support purchasing and supplier management through
    price validation, invoice verification, cost impact analysis, sourcing
    recommendations, and data-driven support for negotiations and procurement
    decisions.

  • Oversee receiving and stores operations, ensuring
    compliance with policies, accurate documentation and system entries, proper
    stock storage and rotation, inventory security, food safety standards,
    and resolution of discrepancies.

  • Ensure compliance
    with accounting, procurement, inventory, and HACCP standards while managing
    month-end activities, supporting audits, training and supervising team members,
    escalating control issues, and delivering ad hoc analysis and projects.


As a Cost Controller, we expect from you:


  • Diploma or Degree in Hospitality Management, Accounting, Finance, or
    a related field, with a minimum of 3 years' experience in hotel cost control,
    preferably within a luxury hospitality environment.

  • Strong
    expertise in Food & Beverage cost control, inventory management, receiving
    processes, and procurement controls within hotel operations.


  • Experience supervising receiving, stores, or finance-related teams,
    with the ability to manage workflows, maintain controls, and support operational
    efficiency.

  • Proficient in inventory and procurement systems,
    preferably Check SCM, with experience maintaining POS integrations
    and familiarity with SUN System or similar hotel accounting platforms.


  • Advanced Microsoft Excel skills, including the preparation of analytical
    reports, reconciliations, cost models, and data-driven insights to support
    decision-making.

  • Excellent analytical, communication,
    organizational, and team management skills, with the ability to identify trends,
    control gaps, cost-saving opportunities, and ensure compliance with food safety
    and HACCP
