Key
Responsibilities

  • Manage and monitor hygiene and food safety
    standards across cluster hotels.
  • Conduct regular hygiene inspections
    in kitchens, restaurants, bars, staff cafeteria, food storage, and receiving
    areas.
  • Ensure proper food handling, storage, temperature control,
    cleaning, and sanitation practices.
  • Develop and maintain HACCP and Food
    Safety Management Systems.
  • Coordinate and follow up on internal
    and external hygiene audits.
  • Prepare corrective and preventive action
    plans and ensure timely completion.
  • Coordinate with Executive Chef,
    F&B, Engineering, Housekeeping, and People & Culture

    on hygiene-related matters.
  • Monitor pest control, waste management,
    water quality, cleaning chemicals, and sanitation programs.
  • Arrange
    food, water, and environmental testing when required.
  • Conduct hygiene
    and food safety training for hotel employees.
  • Maintain all hygiene
    records, checklists, inspection reports, and certificates.
  • Support
    and coordinate with Public Health Officers during
    inspections.
  • Investigate food safety incidents and recommend corrective
    actions.
  • Prepare monthly hygiene reports and highlight key risks
    and areas for improvement.
  • Ensure consistent hygiene standards and best
    practices across all properties.
  • Keep updated on local laws, food safety
    regulations, and industry standards.
